Peanut Butter Snowball Cookies

Snowball cookies are similar in texture to classic shortbread cookies, except they are rolled into powdered sugar after they are baked, to resemble snowballs. These snowball cookies are filled with tons of delicious peanut butter flavor. They are similar in taste to a classic peanut butter cookie with the texture of a shortbread cookie, all rolled into powdered sugar. These are perfect to bake for Christmas, or to enjoy anytime of the year that you want a delicious peanut butter cookie.

The dough for these cookies is made like a classic snowball cookie, except with the addition of peanut butter added to the dough. The prepared cookie dough is rolled into balls, and placed onto a large baking sheet. Bake until the are lightly brown on the bottom. Place powdered sugar into a shallow dish, and roll each cookie into the powdered sugar. Set them onto a cooling rack to cool completely before serving.

Ingredients
  

  • 1/2 cup butter
  • 1/2 cup powdered sugar
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with peanut butter and powdered sugar. Mix until it is fluffy. Add in the vanilla extract, and mix until smooth.
  • Add in the flour, and mix until it is fully combined. Roll the cookie dough into balls, and place at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
  • Place the remaining 1/2 cup powdered sugar into a shallow dish. Roll each baked cookie into the powdered sugar. Let cool completely on cooling racks.
