Chewy oatmeal cookies filled with peanut butter flavor, and stuffed with a chocolate caramel Rolo candy. The peanut butter flavor goes perfectly with the chocolate caramel taste of the Rolos. And the cookies have the soft and chewy texture of a classic oatmeal cookie. These cookies will make the perfect cookie for any holiday or occasion.

The cookie dough is made like a mix of a peanut butter cookie, and a classic oatmeal cookie. Once the cookie dough is prepared, roll the cookie dough into balls, and wrap each piece around a Rolo candy. Form the cookie into a ball and place onto a large ungreased baking sheet. Bake until they are done in the center. Let cool completely on a cooling rack before serving.

Rolo Stuffed Peanut Butter Oatmeal Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Rolos

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, quick oats, salt, and baking soda. In a large bowl, combine butter, peanut butter, and both sugars until fluffy.
  2. Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until completely combined. Roll the cookie dough into balls, and flatten slightly.
  3. Place one Rolo candy on each piece of dough, and fully wrap the cookie dough around the Rolo, and form into a ball. Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
