Soft and chewy oatmeal cookies filled with peanut butter. These delicious cookies are a mix of a classic peanut butter cookie, and a soft and chewy oatmeal cookie. Combined they make the perfect oatmeal cookie. The peanut butter goes great with the oatmeal. You can make these tasty cookies for any holiday or occasion, or just a fun treat to enjoy with your family.

The cookie dough is started like a classic peanut butter cookie dough, with the butter mixed with peanut butter, granulated and brown sugar. Quick oats are mixed with the flour mixture to make them like a traditional chewy oatmeal cookie. Form the cookie dough into balls, and place them at least 2-inches apart onto ungreased baking sheets. Bake until they are done in the center, and let them cool completely on cooling racks before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with peanut butter, and both sugars. Mix until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until a thick dough forms. Roll the cookie dough into balls, and set them onto a large ungreased baking sheet.
  • Bake for 10-12 minutes.
