Grinch Snowball Cookies

Delicious buttery snowball cookies with a sweet peppermint flavor, and filled with chocolate chips. These Grinch snowball cookies are colored green for the Grinch and rolled in powdered sugar, giving them a snowball look. They are sweet and delicious, the perfect cooking for making at Christmas this year that everyone will love.

The dough for these cookies is similar to making classic snowball cookies, except instead of vanilla extract, peppermint extract is used. The dough is also colored green to represent the Grinch, and chocolate chips are added to the cookie dough. Roll the cookie dough into balls, and place onto a large ungreased baking sheet. Bake until the bottoms are lightly browned. These cookies do not spread out in the oven like other cookie dough. Once they are baked, roll them into a shallow dish of powdered sugar and set them onto cooling racks to cool completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • green food coloring
  • 1/2 cup chocolate chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with 1/2 cup powdered sugar until fluffy. Add in peppermint extract, and mix until smooth.
  • Add in flour, and mix until a thick dough forms. Add in green food coloring, mix until fully green. Fold in chocolate chips.
  • Roll the cookie dough into balls, and place at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
  • Place the remaining 1/2 cup powdered sugar into a shallow dish. Roll the baked cookies into the sugar, and let cool on cooling racks.
