Mac and cheese is a classic side dish for any meal, but it is not the healthiest dish to serve on a regular basis. This cauliflower mac and cheese is the perfect solution. It is a healthy and cheesy dish that the whole family will love. Made with cauliflower instead of pasta makes this dish has all of the classic cheesy flavors of mac and cheese, without the carbs. Make this cheesy side dish the next time you want to enjoy a healthy low-carb dish. 

The cheese sauce for this dish is made like how you would prepare a cheese sauce for mac and cheese. Butter is melted in a saucepan with flour added to the pan to cook for a minute to brown. Pour milk into the sauce, along with shredded cheddar cheese and seasonings. Cook the sauce until the cheese has fully melted and the sauce has thickened. Mix with cauliflower florets and place into a greased baking sheet. Bake until the cauliflower is tender and lightly brown. 

Cauliflower Mac and Cheese

Ingredients
  

  • 1 large head cauliflower, chopped into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 400 F. Melt butter in a medium saucepan over medium heat. Add in flour and cook for a minute to brown. Pour in milk, cheese, salt, and pepper. Continue to cook over medium heat, while whisking constantly until the cheese has fully melted and is smooth.
  • Mix cauliflower into a greased baking dish. Bake for 15-20 minutes.
