Creamy and cheesy mac and cheese with a spicy kick to it. This mac and cheese is delicious with salsa mixed into the creamy cheese sauce, and a tex-mex blend cheese is used instead of cheddar cheese. This cheesy side dish goes perfectly with any main meal. It is so quick and easy to make, you can have this mac and cheese done in less than 20 minutes.Â
The mac and cheese sauce is made by melting butter in a large saucepan over medium heat. Flour is added to the butter and cooked until is has lightly browned. Pour in milk, salsa, tex-mex blend cheese, and seasonings. To make the cheese sauce less spicy, you can reduce the amount of salsa added, or add more for a more spicy pasta. Cook the sauce until the cheese has fully melted and the sauce has thickened. Mix the sauce with cooked pasta and serve.Â
