Peanut Butter Cup Brownie Bites

Sweet and chewy chocolate brownie bites topped with a mini Reese’s peanut butter cup. These brownie bites are so quick and easy to make. The soft chewy brownies topped with the peanut butter cups go together perfectly. They are perfect for just about any occasion, like Christmas, Valentine’s Day, or just because you want to enjoy a sweet treat with your family.  

To make the brownie cups, you can either make you own brownie mix or to save on time you can use a boxed mix instead. Prepare the mix according to the package directions. Then divide into muffin pans. Bake until the center comes out clean with a toothpick. Remove from the oven and place one mini peanut butter cup on each brownie bite.

Ingredients
  

  • 3/4 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 12 mini peanut butter cups

Instructions
 

  • Preheat oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking powder. Add in eggs, melted butter, and vanilla extract. Whisk until smooth.
  • Evenly divide batter between 12 greased muffin cups. Bake for 20-25 minutes. Remove from oven, place one peanut butter cup on each brownie.
