Easy Baked Roast Beef

Tender and juicy baked roast beef that makes the perfect Sunday dinner. It would also be great to serve for Christmas dinner or any other occasion. The roast beef is cooked slowly in the oven, until the meat is tender and juicy. Serve with all your favorite comfort side dishes. Such as mashed potatoes and mac and cheese. This roast is the perfect comfort food meal. Make this easy roast on a lazy Sunday, or for a special occasion. 

For this roast, I used a 3-pound chuck roast. If using a larger roast, you may need to adjust the cooking time. Place the roast in a large greased baking dish. Rub evenly with olive oil. For the seasoning mixture, all of the seasonings are combined in a small bowl. Evenly sprinkle over the roast. Bake at 350 F. for the first 30 minutes. Then reduce the oven temperature to 300 F. Cover the roast with foil and bake for another 3 hours, or until the meat is no longer pink in the center. You can use a meat thermometer to make sure that it is cooked through. Let the meat rest for at least 20 minutes before slicing.

Ingredients
  

  • 3 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried oregano

Instructions
 

  • Preheat oven to 350 F. In a small bowl, combine seasonings. Place roast in a greased baking dish. Rub evenly with olive oil.
  • Sprinkle evenly with seasonings. Bake uncovered for 30 minutes. Remove from oven and cover with foil. Bake covered for 3-3 1/2 hours.
